I thought about lowering my NT700. I don't need to flat foot but I need enough surface contact to push the bike around when on it. A mistimed slip puts the bike down.
Instead of lowering the bike I took some old boots to the shoemaker and had him resole them with an extra insert in the sole. Much more contact. With the increase in sole thickness, shifting changes a bit. Otherwise works so far.
Additionally I will have the seat sitting position lowered at Rich's on Puget Sound.
